Dates keep well, but the way you store them can make a big difference to their texture.

For most dried dates, the fridge is best for everyday use and the freezer is best for long-term storage. Room temperature is fine for shorter periods, but dates tend to become drier and firmer over time.

Freezer

Freezing is one of the best ways to store dried dates for longer periods. Keep them well sealed and take out only what you need.

Firmer, chewier dates may be quite hard straight from the freezer, so leave them at room temperature for around 15–20 minutes before eating. Softer varieties can remain surprisingly soft even when frozen.

Fridge

For dates you eat regularly, the fridge is usually the easiest option. It helps preserve their softness while keeping them ready to eat.

Store them in a closed container so they do not dry out or absorb smells from other foods.

Room temperature

Dates can be kept at room temperature, especially if you plan to eat them fairly soon. Over time, however, they can become noticeably drier and firmer. For longer storage, the fridge or freezer is a better choice.

How should you store pressed dates?

Pressed dates are a little different. We recommend keeping them at room temperature in a cool, dry and dark place. Once opened, transfer them to a clean glass container.

A useful tip: separate the dates when you first put them into the container. That way, you can easily take one or two later without having to pull apart the sticky block every time.

How long do dates last?

Shelf life depends on the variety, moisture level and packaging, but as a rough guide:

  • Room temperature: best for shorter-term storage
  • Fridge: several months
  • Freezer: around 6–12 months or longer for maintaining good quality

Always follow the storage instructions and best-before date on the packaging as well.

Are white crystals on dates mold?

Usually not. Dates naturally contain a lot of sugar, and over time some of that sugar can crystallise.

You may see white, pale or date-coloured crystals inside or on the outside of the fruit. These are harmless and do not mean the date has gone bad.

What does mold on dates look like?

Mold is different from crystallised sugar. One sign to watch for is black, powdery material inside the date, often around the area where the stone was.

Discard a date if you notice unusual fuzzy growth or a clearly fermented, sour or unpleasant smell. With very dark dates, colour alone can be harder to judge, so look at the texture too: sugar looks crystalline or grainy, while mold tends to look powdery or fuzzy.

The simple rule

For most dried dates: fridge for everyday use, freezer for long-term storage.

For pressed dates: keep them cool, dry and dark at room temperature, and transfer them to a glass container after opening.

Stored properly, dates can keep their texture and flavour for a surprisingly long time.
