Our recipe uses raw date syrup instead of processed sugars. This syrup, created from just sun-ripened, cold-pressed Mazafati dates and bottled with care in Switzerland, brings a complex caramel sweetness and subtle fruitiness that enhances the chocolate and pistachios perfectly. It’s a natural sweetener that adds a depth of flavor that only real ingredients can create.

Simple, No-Bake, and Made for Everyday Enjoyment
No fancy equipment or complicated steps are needed. With just a chocolate mold, freezer, and a few quality ingredients, this bar is easy to prepare and store. Whether you’re a seasoned home cook or new to making treats from scratch, this recipe delivers a satisfying chocolate bar that fits perfectly into mindful eating.
Ingredients (Makes one large bar)
- 1-2 tsp raw date syrup (for drizzling on the mold + optional 1 tsp at the end as decoration)
- ~1 dozen peeled pistachios
- 60-70 g dark chocolate (about 30g for first layer, and then the rest for the second layer)
- 1 tsp ghee (or coconut oil for a vegan alternative)
- 60-80 g Kholas dates, pitted
You’ll also need:
- A 100g chocolate bar mold
- A small saucepan or double boiler for melting chocolate
Instructions
1. Prepare the mold
Drizzle 1–2 teaspoons of raw date syrup across the base of the empty chocolate mold. This will give your finished bar a beautiful, slightly translucent effect, like a window of sweetness. :)
2. Add the pistachios
Place about a dozen peeled pistachios in the mold. Scatter them naturally, but try to place a few directly on top of the syrup drizzles to enhance the visual contrast once the bar sets.
3. Freeze briefly
Place the mold in the freezer for 5–10 minutes. This helps the syrup and nuts stay in place before pouring in the chocolate.
4. Melt the dark chocolate
In a small saucepan or double boiler, gently melt 60–70 grams of dark chocolate with about a teaspoon of ghee or coconut oil until smooth. You’ll need about 30 g for step 5 and the remaining chocolate for step 7.
5. Pour the first chocolate layer
Remove the mold from the freezer and spread a thin layer (a little less than half of the melted chocolate, so about 30g) of the melted chocolate over the pistachios and syrup. Don’t overfill yet, you’ll still need space for dates and a second layer of chocolate. Place it back in the freezer for another 10 minutes, or until fully set.
6. Add the dates
Once the chocolate has hardened, gently press whole pitted Kholas dates onto the mold to form a single solid layer. Press them flat with your fingers so they bind together into a thin, cohesive sheet of dates. Try to be careful not to break the first layer of chocolate, but don’t worry if you do a little bit.
7. Pour the final chocolate layer
Pour the remaining 30-40 grams of melted dark chocolate over the pressed date layer, making sure to fill the mold completely, including all corners. If you slightly overfill, that’s okay, any excess that leaks on the sides can be trimmed once the bar is set or simply enjoyed as-is.
8. Tap to remove air bubbles
Before chilling, tap the mold gently on the counter a few times to remove any trapped air and ensure a smooth finish.
9. Optional final drizzle
If you like, drizzle a final teaspoon of raw date syrup over the top of the chocolate and use a toothpick to create a swirl or marbled pattern.
10. Freeze until solid
Freeze the entire bar for 45–60 minutes or until completely hardened.
11. Unmold and enjoy
Pop the bar out of the mold and admire your homemade creation, rich, textured, and ready to eat! :)
Serving Suggestions
Just like any good chocolate bar, this one is best enjoyed whenever the craving hits. Personally, I love it alongside a hot coffee, but it also works as a small gift, post-workout snack, or mid-afternoon pick-me-up.
Storage Tips
Store your pistachio date chocolate bar in an airtight container in the fridge for up to 1 week, or freeze it for longer storage. Best enjoyed chilled or at room temperature.
Variations
- Swap pistachios for walnuts, almonds, or hazelnuts.
- Add a pinch of flaky sea salt to the top before chilling.
- Try mixing in bits of dehydrated fruit (like strawberries or orange peel) for a twist.
- Use coconut oil instead of ghee for a vegan-friendly version.
- Go extra dark with 85% chocolate, or tone it down with something milkier if you prefer.
