Ingredients
For the dough:
- 500 g Spelt flour (Type 1050)
- 10 ml Extra Virgin Olive Oil (plus extra for the pan)
- 20 g dattelmond Raw Date Syrup
- 1 tsp Salt
- 1 Packet Dry Yeast (7 g)
- 300 ml Lukewarm Water
For the topping:
- ~50 g Goat Cheese, sliced
- 4-5 Cherry Tomatoes, quartered
- 3-4 Dates
- 2 Sprigs Fresh Rosemary

1/2 Onion, thinly sliced
For finishing:
- 2 tbsp dattelmond date syrup
Instructions
1. Preparing the Dough
Mix flour, olive oil, date syrup, and salt in a bowl and make a well in the middle. Dissolve yeast in lukewarm water until frothy, then pour into the well. Knead for 5-10 minutes until smooth and elastic. Cover and let rise for at least one hour.
2. Preheating and Shaping
Preheat the oven to 200 °C and oil a baking tray. When the dough has risen, transfer it to the tray and use wet hands to stretch it into an even rectangle that fills the pan.
3. Adding Toppings
Spread the goat cheese slices evenly over the dough. Scatter quartered cherry tomatoes, dates, rosemary sprigs, and thin onion slices on top. Press the toppings lightly into the dough so they stay in place while baking.
4. Baking
Bake the focaccia for about 20-30 minutes, until the crust is golden and crisp, and the toppings look roasted.
5. Finishing Touches
Cool briefly, then drizzle with 2 tablespoons of date syrup. Cut and serve warm. Alternatively, you can add the date syrup to the slices being served instead of the whole focaccia so that potential leftovers don't become too soggy. Enjoy! :)
