Super easy to make with simple ingredients, they're chewy and soft with just the right amount of crunch. This recipe swaps out chocolate chips for dates, blending different cultures of flavors for the most satisfying sweet bites! With the deep caramel-like sweetness of dates, they offer a warm, incomparable flavor, almost reminiscent of an apple pie mixed with a butter cookie, only without the sourness.

Ingredients (Makes 18 cookies)
- 120 g Butter
- 180 g Raw cane sugar
- 1 Large Egg
- 200 g Flour
- 1 tsp Baking Powder
- 0.5 tsp Himalayan Salt
- 200 g Chopped Sukari Dates + more for topping

Preheat the oven - Preheat the oven to 190°C and line a baking sheet with parchment paper.

Prepare the dry ingredients - In a medium bowl, mix the flour, baking powder, salt and set aside.
- Cream the butter and sugar - In a large bowl, cream together the butter and sugar until combined.
- Mix in the egg – Add the egg and beat until light. This should take about 1 minute.
- Add the dry ingredients – Slowly add in the dry ingredients, mixing until combined
- Add the dates – Fold in the chopped dates, ensuring they're evenly distributed throughout the dough.
- Form the cookies - Depending on how big you like your cookies, scoop tablespoon-sized balls of dough onto the prepared baking sheet.

Decorate (optional) - Lightly press little chunks of dates onto each cookie before baking for extra texture, flavor, and aesthetic satisfaction.
- Bake – Bake for 10-12 minutes, or until the edges have just begun to turn a golden-brown color.
- Cool & Enjoy - Allow the cookies to cool down on the baking sheet for 5 minutes before transferring to a wire rack. Serve with a glass of milk for dunking the cookies into or drizzle with date syrup for extra sweetness! Can be stored at room temperature for up to 5 days.

Ingredient Replacements and Additions for date cookies

Vegan alternative – Replace the butter with coconut oil and the egg with banana* or flaxseeds*.
- (*1 egg = 1 tbsp flaxseeds + 3 tbsp water).
- (*1 egg = 120 g mashed banana).
- Sugar substitutes - The sugar can be substituted with most dry sweeteners.
- Chocolate - For a chocolatey-date cookie, replace half of the dates with chopped chocolate bits or chocolate chips and bake as normal.

Crunchy? Yes, please! - The Sukari crowns* already provide a light crunch, but for all the nut-lovers out there, you can also decorate the cookies with chopped walnuts or pistachios which really complement the sweetness of the dates.
- (*Sukari dates have light-yellow to golden-brown crowns at the top of each fruit. The date itself is very soft and chewy, but the crown can sometimes have a crunchy texture, similar to that of a crisp, caramelized sugar coating. Not many date varieties have this crown, making Sukari quite unique from other dates.)
- What kind of dates should I use? - While you can use any kind of dates to make these cookies, our Sukari dates are the ideal choice because they're already so soft that they don't need to be soaked before baking. As well, they taste much sweeter than other date varieties, satisfying any sweet tooth while simultaneously requiring less overall added sugar to baked goods. And as mentioned above, their golden yellow crowns add a special, natural sweet crunch that is difficult to replicate.
Storage Tips
- Freezing - These cookies also freeze great! They can be stored in the freezer for up to 3 months, but for "fresh" cookies at any time, you can also freeze the dough! Just pre-shape them into your preferred size and freeze them in an airtight container in a single layer. Thaw before use and bake as normal.
Baking Tips
- Be careful not to overbake! - Be careful not to overbake your cookies! They will and should look under-done by the end of the bake-time, but that is exactly what we want! As they cool down, they will form more properly and be perfectly soft and fluffy!
- Doubling, Halving, etc. - This recipe can be halved or doubled without an issue! Just multiply to your preference and proceed as normal.
